Mutton in Garam Masala ( My version of Mutton Do Piaaza)

This is a recipe which i have slightly altered from the original.

Ingredients

Mutton - 1 Kg, Cubed
Onions - 750 grams
Ginger - ground, 3 eating spoons
Garlic - ground , 2 eating spoons
Red Chile - whole , 3-4
Yogurt - 2 cups , whipped
Garam Masala - roasted and ground , 2 spoons, ( the best which i find is of a brand called Laziza , in meat shops, it comes in whole, you need to roast it for 1-2 mins then grind it )
Oil - for cooking, use mustard oil for enhanced taste.

Wash the mutton cubes and strain out water. Marinate with yogurt and keep aside for 1 hour.

For Cooking, Warm oil in a deep vessel, add whole red Chile , chopped onion, ginger and garlic paste and fry for 4-5 mins on medium heat. Onion should start turning brown. Add the marinated mutton cube and keep on frying for 15 mins. You should not see onion pieces by now. Add salt, and Garam Masala to the meat and stir for 3-4 mins . Add hot boiling water to the meat (4-5 cups) and cover the lid. Let the meat cook on medium -low heat for 30 mins. If you want it hot you can add red chilie powder per the taste.

this goes very well with rice or roti.
